Spaghetti Pie

Hello there everyone!  Wow, please accept my apology as I have been quite neglectful of my site.  Life has taken over!!  While I’ve got your attention, I’d like to remind everyone that this isn’t all about me.  (That probably comes as a shock to those of you who know me well).  If you’ve any recipes you’d like to share of your own, please send them in and I’ll post them for you.  I have already started doing this, and I have just as much to learn from you!!  I too need fresh ideas from time to time.  Moving right along. . . . .  let me say that this recipe that we’re making today is so great for big groups, and it’s safe as well, in other words there’s nothing weird in it for picky eaters.  It’s perfect for big groups, too as it serves quite a few, at least 12.  So, give this one a try and let me know how you like it.  It’s one of those dishes that we refer to as “comfort food”.  So, go get comfy in your kitchen!!

SPAGHETTI PIE

Cook up 1/2 lb. Angel Hair Pasta according to package directions  While it’s still good and hot, add 3 T butter and 1/2 C parmesan, or be a little more generous than that ; )  Mix this together and lay in a 13×9, (the spaghetti, not you!)  Spread 16 oz small curd cottage cheese over that, then sprinkle 16 oz shredded mozzerella over and if you are feeling kind of crazy, put down a layer of pepperoni.  Top with at least 4 C meat spag sauce and bake covered at 350 for about an hour.  Now back to the meat sauce.  Sometimes all I do is open up a good jar of spag sauce, like the Paul Newman brand and add a lb of ground beef or sausage that I fried up, or you can do 1/2 lb of beef and sausage.  Get jiggy with it!!  Do what you want, but I’ll just say that we like ours “saucy”.  Serve with a lettuce salad, either with Italian dressing or Caesar (no comments on that LeAnne) and garlic bread, and don’t you dare forget that veggie!!!!!!!  I’ll be watching!!

    I made this for the youth group leaders last week. I’m kind of scared of cottage cheese, so I used a mixture of sour cream and cream cheese instead. As far as I know, everyone who ate it is still living!
