Pizza Soup

Folks, it’s still winter out there, so don’t put your soup pots away just yet!  I’ve got a great soup that every person you serve it to will be impressed with, and the best part is, it’s relatively easy to make.  Give it a shot, but do it quick before Spring comes and you’re not hungry for soup anymore!

PIZZA SOUP

5 cans Minestrone Soup, 5 cans water, 1 bag frozen cheese tortellini, 1 28 oz can diced tomatoes WITH JUICE, 1 carton frozen chopped spinach, 1# bulk Italian Sausage.

Cook the tortellini according to pkg directions adding a couple of chicken buillon cubes to the water. Drain and add to the your biggest soup pot.   While that’s cooking, fry up your Italian Sausage and add that.  Just so you know, I don’t drain the fat off my sausage.  The Tablespoon or two of fat adds flavor to the soup. Next  add your 5 cans Minestrone soup, as well as the water using each individual can to add water so you’re rinsing out each can of it’s ingredients.  Continue adding the tomatoes with juice, and the spinach.  I’m careful to never let the soup boil, as the cooked tortellini can get overdone, thus spilling out it’s contents.  Just bring it to a light simmer.

This soup is superb when served with parmesan cheese, and cornbread.  My family likes to stick a square of cornbread right in the middle of the soup.

Enjoy.  Oh, this makes a LOT.  Think about making this for a large group.  Everyone will be happy and satisfied.

Clam Dip

Let’s say you get invited at the last minute to a cocktail party this Christmas Holiday season. . . . or someone drops in on you!  Here’s a dip that’s so easy to whip up, but has all of the flavor of something more labor intensive.

CLAM DIP

1 can Minced Clams, 8 oz softened cream cheese, 1 dollop sour cream, dollop mayonnaise, and a dash of worcestshire.  Spoon the clams out of the can allowing a little  juice to come with each portion.  You need some of the juice to loosen it up, and you’ll need it for the flavor too.  Add the rest of the ingredients once the clams are added.  Sprinkle a little garlic salt, to taste.  Slowly add more juice until the right consistency for dipping. You will not end up using all of it.  This dip tastes best with ripple style potato chips.  Seriously.

Polish Mistakes
